- Food preservatives: Monocaprylin, as a new type of preservative, has excellent antibacterial activity and can effectively inhibit various foodborne pathogenic and spoilage microorganisms, with low toxicity and high safety. Adding an appropriate amount of GMC to various foods such as meat products, raw cuts, and lactone tofu can significantly extend their shelf life.
- Baking food improvement: In baked goods, Monocaprylin as emulsifiers can enhance the gas retention of gluten and dough, improve the tolerance of dough to mechanical collisions and fermentation temperature changes.
