Carboxymethyl chitosan is a water-soluble chitosan derivative and an amphoteric polyelectrolyte—a polyelectrolyte containing both cationic and anionic groups within its molecular chain. Carboxymethyl chitosan is formed by introducing the hydrophilic group -CH2COOH into the chitosan polymer chain. Carboxymethyl chitosan improves its water solubility, particularly in neutral and alkaline solutions. This modification enhances its film-forming, thickening, moisturizing, and chelating properties, resulting in its wide application in agriculture, medicine, health supplements, cosmetics, preservation, and environmental protection.
